#MacroFriendlyMonday13 — “French Toast” Cauliflower Bites + Peanut Butter Maple Syrup {Recipe & New Food Finds}

OMG! You guys! I seriously came up with the most random and delicious combination the other day! This #StrangeButGood recipe may not appeal to some, but for those who understand the amazing powers of cauliflower and creativity, this will be right up your alley! Especially if you already appreciate the power of sweet cauliflower and/or enjoy #MacroMagic! They taste like French toast bites, so that’s what I’m calling them 💁🏻‍♀️

 

I also wanted to share about a couple of new food products I have tried recently!

 

First is Lakanto Monk Fruit Maple Syrup; this stuff is a game changer! I’ve seen it on Amazon for $10 and was afraid to spend that much not knowing if I would like it, but I found it at Piggly Wiggly for $6.99! Katie uses it a lot in her recipes and when I finally found it locally and for cheaper than Amazon, I just had to give it a try. Glad I took a chance, because it will be my go to maple syrup and liquid sweetener of choice from now on. It is higher in price than other liquid sweeteners, but it is worth it to me as it is much lower in sugar than regular maple syrup. It would be a great option for those with diabetes or on a low carb/low glycemic index dietary plan. It is actually cheaper to get it on Amazon when you buy the 3 pack which I will do now that I know I like it! I also tried their chocolate bar and enjoyed it, but I think Lily’s is still the best(which is odd because that one is Stevia sweetened and I usually don’t prefer Stevia).

Next up is Flavor God Seasonings. I saw these on Instagram and Facebook. I ordered several of the savory and 2 of the sweet flavors. I love both the sweet ones (chocolate donut and buttery cinnamon roll) and my favorite of the savory so far is ketchup flavor!! I use less ketchup when I add it to my foods. It is pretty legit! I like the Italian one in this recipe and next Monday I have a recipe featuring the Cheese flavor coming at ya! They market the flavors as 0 cal, but I think if you use multiple servings, it will add up, especially with the sweet ones as they have some sugar/dried honey and some of the savory which have things like Parmesan cheese and almond meal. I think they get around the food label reading as 0 calorie because as long as it is less than 4 calories per serving, they can call it “negligible” or 0 cal. This is the same thing done with “calorie free” sweeteners, in case you don’t know. They are usually about 4/calories per packet. Not a lot, but it can add up if you use them all day in various things.  Anyhow, I digress, just saw the opportunity to share some nutrition info that some may not be aware of!

 

In addition to being very macro friendly, this recipe would be diabetic friendly and suitable for those on a lower carb meal plan!

Ingredients:

Instructions:

1/ Steam cook the bag of cauliflower florets in the microwave.
2/ Spread them over a baking sheet lined with foil and toss them in cooking spray.
3/ Broil on low for 20 minutes, tossing about halfway through so that they got crispy all over as below. You could also cook them in an air Fryer.

4/ After cooking, toss them in Flavor God buttery cinnamon roll seasoning.
5/ While they are cooking, mix 2 tablespoons of PB2 powder with one serving of Lakanto Maple Syrup. Although, you may want to double if you’re like me and want more sauce!
6/ Enjoy!
