Shout out to Maggie of Adapted Eats (Instagram page @adaptedeats) who created the most amazing meatball recipe I think I’ve ever tried! You guys have got to try these and follow her blog for more healthy, delicious recipes! This got added to my list of favorite meal prep recipes! You can that Pinterest Board here.
I made this recipe for my weekly meal prep. I am totally #TeamLeftovers, but if you are not, I love that these guys can be used in multiple ways, so you can get more than one meal variation out of the recipe if you are one of those people who don’t like leftovers. Her recipe can be found here, but I highly recommend using the variations as noted below, as I think it truly made the flavor of the recipe. Seriously; absolutely beyond amazing.
You could use the same recipe and make burgers or a meatloaf. I crumbled my meatballs over chopped butter lettuce and warm roasted veggies as the protein in my huge salad, AKA the #MacroMicroBowl.
Ok, here are my adjustments to her recipe which you can grab here. I used what I had on hand. I did not have any onion, so I used a whole bag of Green Giant Tuscan seasoned broccoli. Because the broccoli was seasoned with Parmesan, and I did not have breadcrumbs, I left both of those out too. I used liquid egg whites instead of an egg (only because I never can tell the difference in using whites vs whole eggs in recipes like this, and I like to eat my whole eggs drippy yolk style 🍳). I used Bella Sun Luci Julienne-Cut Sun Dried Tomatoes with Italian Basil. I love that they come in a re-sealable pouch so. I always freeze what I don’t use and I happened to have them on hand in the freezer. I used Flavor God Italian Zest for the Italian seasoning. I followed the recipe method and instructions as listed on her site!

Meatballs are just so much fun! A tip for those moms out there who may have family that is not a fan of meatloaf… all you have to do is make that meatloaf recipe into meatball form, and I guarantee you they won’t turn their noses up!
