
Got a super simple, but flavor-packed recipe for you today! It takes less than five minutes to throw together, but it’s super versatile. I served it over zoodles with roasted chicken and with spinach, zoodles, + lean ground beef. It would also make a great side if you left out the proteins source.

🥣 Ingredients:
🥥12 oz butternut squash, cooked (I used steamable, but roasted works too)
🥥1 cup (244g) pumpkin (I used canned)
🥥1/2 cup (120mL) light coconut milk (I used Thai kitchen carton kind as it’s PF approved; canned has gums, but any works if not strict PF)
🥥Spices to taste (I used salt, pepper, cinnamon, and nutmeg)
👩🏻🍳 Method:
1️⃣ Add all ingredients to a bullet and purée. You can also use an immersion blender and a bowl.
2️⃣ Serve with veggies and/or noodles of choice + meat of choice (see notes for ideas).
3️⃣ Enjoy!
📝 Notes:
❗️ I got 5 servings (~5oz each) but you can adjust to suit needs.
❗️ Add any other seasons you enjoy. You could even omit the salt and pepper and just add cinnamon and nutmeg along with a pinch of sweetener.
❗️ You can freeze leftovers if needed.
❗️ You could use full fat coconut milk and/or add shredded coconut too.
❗️ I meal prepped my meat and spirilized zucchini so it’s easier to throw together these bowls each day!
❗️ You can serve it on anything—riced veggies, cooked veggies, quinoa, jasmine rice, or any noodles!
❗️ You could also use this as a base for a soup by adding bone broth or additional coconut milk to thin it more.
