Dinners last week were Dashing Dish Clean Eating 6 Ingredient Sloppy Joes (pic below). I doubled the recipe and followed to a T (which is rare 😂) then bulked it up with a bag of cooked shredded cabbage and diced cooked mushrooms. Froze one batch in individual servings for another week (Tip 1️⃣: make a double batch of your tried and true recipes any time you make them and freeze one batch.
I served the Sloppy Joes with cauliflower rice seasoned with Morton Salt’s Nature seasoning, a wedge of Laughing Cow cheese, and onion Kim’s Magic Pop for scooping.
Tip 2️⃣: to make ideas for meal prep easier, I try to create meal “templates” which I can swap out a few things and flavors and not have to reinvent the wheel each week. Right now, my current evening meal template is some kind of veggie/meat mashup with the magic pop for dipping. I used my white Queso meatloaf recipe prior to this week’s variation with the Sloppy Joes. I served that with the riced cauliflower and diced tomatoes (shown below).
Another example, and one meal I have almost daily is my #MacroMicroBowl aka hot/cold ginormous salad. I change out the seasonings, the protein that I prep for topping it, and a few of the veggies, but the basic “structure” stays the same. You can utilize this “basic recipe with tweaks” idea for all kinds of things… Overnight oats or oat bakes, protein shakes, protein breads/bars/muffins, soups, casseroles, etc.
When you streamline the process, it makes it so much easier! Instead of having to think of a brand new meal to prep each week, all I have to come up with are the flavor profiles I want and the rest falls into place!
