White Queso Fajita Meatloaf {Macro Friendly Monday 9}

There’s no way to make meatloaf look appealing in photos that I’m aware of. If anyone has tips, let me know!

This recipe is just too good not to share, even if there are no nice photos! It’s so simple and #MealPrep friendly! It makes 8 servings—see below for macros!

I know not everyone is a fan of meatloaf, but trust me, the flavor is out of this world!


Story time!

Growing up, my dad only made 2 meals, which was fine because my mom is an amazing cook! One of the meals was grilled cheese and the other was meatloaf! I was a recipe he learned while selling cookware in his younger years where the whole meal of meat loaf and green beans was made on the countertop cooking pan with a lid (I have no idea what it was called). For some reason he always added eggs (whole in the shell) to the pan with the meat loaf and green beans. I don’t even remember what we did with them once they were cooked. They ended up hard boiled. Was this a 70s/80s thing? I am not sure. In any case, the eggs go IN the meatloaf in this recipe!

If I didn’t know any better, I would think my dad had his own version of #MealPrep by cooking 2 meals in one!


White Queso Fajita Meatloaf

🥣 Ingredients:

➕1 lb lean grass fed beef
➕184g liquid egg whites
➕170g cooked corn
➕12 oz container of mushrooms, chopped and cooked
➕1 packet McCormick fajita seasoning
➕8 oz fat free Greek yogurt
➕1 can (14.5 oz) diced tomatoes *drained well*
➕2 cans (4 oz each) mild green chilies *drained well*

👩🏻‍🍳 Directions:

1️⃣Preheat oven to 375 degrees F.
2️⃣Mix all ingredients well.
3️⃣Line and 8×8 glass Pyrex with parchment and press meat mix into the dish.
4️⃣Bake for about 45-55 minutes (check at 40). It should be set in the middle/not red looking.
5️⃣Remove from the oven and set on a wire rack to cool for a few minutes.
6️⃣Enjoy warm, or allow to cool to room temperature and store, covered, in the refrigerator.

 

📝Notes:

✅This is delicious on its own, but I absolutely love using it to top off a #MacroMicroBowl (aka hot/cold salad). Reheat the leftovers along with any roasted veggies you have on hand then crumble over your #BAS. Photo above shows example.
✅It freezes well!
✅You can also make it into mini meatloaves, meat muffins, or meatballs.
