Macro Friendly Mondays — TKN Lamb With Berries & Plantains!

Anyone else love lamb? Especially around Easter, it’s a favorite of mine! This dish comes strait from the TKN blog and offers a unique contrast between savory lamb, sweet plantains, and fresh juicy berries. Coming together quickly, it’s the perfect weeknight dish!

🥣 Ingredients:
🍴Lamb – 100g
🍴Raspberries – 50g
🍴Plantains – 20g
🍴Coconut oil – 5g
🍴Salt, pepper, cumin, sage; pinch/to taste

👩🏻‍🍳 Instructions:
1️⃣ Season the lamb with cumin and sage – measure with your heart.
2️⃣ Brown the lamb in a pan over medium heat until cooked through. Plate the lamb and season with salt and pepper to taste.
3️⃣ Slice plantains. Add coconut oil in the same pan you used for you lamb. Cook the plantains o er medium heat in the oil until brown (approximately 5 minutes each side).
4️⃣ Plate plantains with the lamb, serve with raspberries, and enjoy!
