#MacroFriendlyMonday16 — Crockpot Seafood Jambalaya!

This recipe turned out even better than expected! Last week was Cajun themed recipe night at church small group. We have one member who is pescatarian, so I wanted to bring a recipe that would fit my macros as well as give her something she could enjoy since most the rest of the other dishes included chicken or sausage.

You could easily add chicken and sausage to this and adjust your macros. I was surprised by how everyone said multiple times that it was so good even despite not having those other meats in them! If it passes the test of church small group picky palates, then you know the recipe is good!

If you like heat, add more Cajun spice. I do not and this was not hot at all!

Crockpot Seafood Jambalaya!

🥣Ingredients:
✅ 28 ounce can crushed tomatoes
✅ 6 ounce can tomato paste
✅ 20 ounce bag frozen mixed bell peppers and onions
✅ 12 ounce bag frozen cut okra
✅ 12 ounce bag Green Giant herb cauliflower rice (next time I’ll add two)
✅ 12 ounce bag seasoning blend frozen veggies (the kind that has onions, celery, etc.)
✅ 1 pound frozen baby shrimp
✅ 36 ounce cans lump crab (do not drain; use juice)
✅ 1 tablespoon Cajun seasoning (more if you like heat)
✅ 1/2 packet taco seasoning
✅ 3 bay leaves

👩🏻‍🍳 Method:
Add everything but the meats to a slow cooker and cook on low for 6 hours. Add meats and cook an additional 1-2 hours. Remove bay leaves before serving. Be sure to use a liner for easy cleanup!

See below for macros. Recipe makes 10 servings, but could easily adjust to fit your macros. I will weigh next time to give specifics on how much each serving size is. I did not have time before We had to leave! For now, just weigh you’re finished recipe and divide by 10 to get portion size.


Tip: If you want it on the thicker side, drain off some of the excess liquid when done. I got about 2 cups. This was so that it would be more like jambalaya than gumbo 😂
