Macro Friendly Mondays — Delicata Squash Fries!

If you have never had delicata squash, now is the season to try them! They are only available for a couple months this time of year. Not all stores carry them, but if you find them I highly recommend buying several! I have found these at Whole Foods as well as Trader Joe’s, but sadly my grocery stores locally don’t carry them. I grabbed several when I found them on our trip a couple weeks back. See below for picture of what they look like.


The beauty of the squash is that you can eat the skin! They are also not quite as difficult to cut so it’s a lot less prep work to cook them then some of the other winter squash (I’m looking at you kabocha).


How to prepare: I typically wash the outside well, chop off the ends, slice longways down the middle end to end, scoop out the seeds, then slice into crescent shapes about 1/4 inch thick. Then I roast them on a sheet lined with aluminum foil sprayed with cooking spray. If you are going to eat them savory, sprinkle with a little bit of salt. If you are going to eat them sweet, sprinkle with a little bit of cinnamon. Roast for about 15 minutes at 385°F, then flip and roast for an additional 5-10 minutes.


You can enjoy them as is, dipped in ketchup if they’re savory, dipped in a sauce made with PB2 / Powdered Peanut Butter and a bit of sweetener thinned with water, or in your favorite winter salad.
