#MacroFriendlyMondays — 5 Ingredient Mediterranean Omelette! {Tips+video!}

This is one of my favorite #MinimalistMealPrep recipes for lunch or dinner. It’s also something I find is widely available on restaurants. Most places are willing to accommodate an egg white only omelette and/or adding/changing ingredients if they offer regular omelettes on the menu. I’ve never had anyone turn down my special requests! I will have them add onions and bell peppers when I order it at a restaurant, but the 5 ingredients I use at home are: egg whites, feta, mushrooms, tomatoes, and spinach. (See macros below for my version).

When I make it home, I usually add everything to the omelette, but I have done the tomatoes on the side (as below). The key is to make sure you cook the mushrooms ahead of time so that they don’t release liquid while cooking in the pan and use tomatoes that are not as juicy, like grape tomatoes.


🥣 Ingredients:
1️⃣ 274g egg whites (I use the carton kind)
2️⃣ 3 oz cherry tomatoes 
3️⃣ 2 oz cooked mushrooms (3 oz raw)
4️⃣ 21g basil & tomato feta (Publix brand; or any feta if you can’t find this one)
5️⃣ Big handful of raw spinach (1-2 oz)
6️⃣ Seasonings of choice, salt + pepper to taste

👩🏻‍🍳 Directions:
Mix your egg whites, tomatoes, feta, and mushrooms and then pour it into an 8 inch pan sprayed with cooking spray. Sprinkle with salt + pepper and any other seasonings you’d like to add. I use McCormick spice Himalayan pink salt, black pepper, and garlic mix. Then add the spinach over the top. Cover with a clear glass lid and cook until all the egg whites have solidified. You can kind of swirl the pan around a few times while it cooks to make it even. Once it’s solidified, flip (see tip below) and cook for about 30 more seconds.

Tip: The easiest to flip it is to transfer the whole omelette to a plate with the pan-cooked side down by sliding it out of the pan. Then, place the cooking pan on top of the omelette and flip the plate so that the omelette goes back into the pan.
