You guys! If you have never tried fruit with your scrambled eggs, I highly recommend it! This is a very simple meal with minimal, real food ingredients, but don’t let the simplicity for you. It’s amazing! As an added bonus, you can easily adjust the ingredients and add your favorite side(s) to fit your macros. I love serving the warm eggs and apples over baby spinach. The heat wilts the spinach just a little and all of the flavors combined are heavenly.
🍽 2 eggs plus 2 egg whites (I used liquid)
🍽 1/4 cup low fat cottage cheese (I like Good Culture)
🍽 Salt and pepper, to taste
🍽 84g apple slices
🍽 Pinch salt
🍽 Cinnamon, to taste
🍴 To serve:
56g baby spinach
Salt and pepper, to taste
Heat a pan on the stove over low-medium. Add the apples, cinnamon, and pinch of salt. Cook, stirring frequently until apples are tender and caramelized. Add a teaspoon or two of water as you cook if needed so they don’t burn. Set apples aside. Cook the eggs and cottage cheese in a pan sprayed with cooking spray, stirring frequently so that they stay creamy and don’t dry out. Add salt and pepper. Arrange spinach on a plate, then add cooked eggs and apples. Season with additional salt and pepper if desired. Enjoy!
❗️ You could use pears instead of apples.
❗️ You could use mixed baby greens in place of spinach.
❗️ Cottage is optional. You can omit for dairy-free. It just adds extra creaminess and protein!
