#MacroFriendlyMondays — Chili Cheese Dog Salad!

When in doubt, take your favorite comfort food and make it into a salad! I’ve done this with pizza before, and there’s a plethora of recipes that employ this concept to make a big Mac or cheeseburger salad, but I can’t believe I never thought to try this one before!

All inspiration to this hot/cold salad (aka #MacroMicroBowl) credit goes to @Food_Lover_Linds! I saw her post something like this in her Instagram stories last week and tweaked a bit to make it my own! Give her a follow on Instagram for some other phenomenal and easy healthy recipes!

🥣 Ingredients:
🌭 6oz spinach
🌭 2oz diced onion
🌭 2 hotdogs, cooked and sliced into coins (I used Hebrew National 97% fat free beef)
🌭 2 slices Velveeta
🌭 1 serving (8oz) turkey chili (I used Dashing Dish Copycat Wendy’s chili)
🌭 6oz yellow squash, diced and cooked
🌭 Pinch garlic salt

👩🏻‍🍳 Instructions:
🥗 Toss spinach in a giant mixing bowl and sprinkle with garlic salt; toss to coat evenly.
🥗 Heat chili in the microwave (if starting with leftovers) and top with cheese. Stir some so cheese melts; spoon over spinach
🥗 Add hotdog coins.
🥗 Add cooked squash (I used a pinch of garlic salt when cooking it too).
🥗 Sprinkle with onion and enjoy!

📝 Notes:
❗️You can adjust ingredients to fit macros.
❗️I meal prepped this so I cooked the chili and squash in a big batch, then divided each day. I wait to cook the hotdogs each day when ready to serve the salad.
