Got a super easy, 6 ingredient recipe for you today. Pretty crazy macros which leave room for all kinds of fun toppings! This also make great sandwich buns.
👉🏼3 tbsp coconut flour
👉🏼100g liquid egg whites
👉🏼1/4 tsp baking powder
👉🏼2 oz coconut milk (or milk of choice, or water)
👉🏼Cinnamon, to taste
👉🏼Sweetener of choice to taste (I used capful of honey cinnamon Skinny Syrup and a couple Splenda packets)
1️⃣ Preheat waffle iron (I used a mini dash).
2️⃣ Whisk dry ingredients in a bowl.
3️⃣ Mix in wet ingredients and stir to combine.
4️⃣ Let sit a couple of minutes to thicken.
5️⃣ Cook on your waffle iron according to manufacture instructions. Do not overfill; you’ll likely need less batter than you think – it expands! I got 4 mini waffles, but likely could have gotten 5.
6️⃣ Serve with toppings of choice and enjoy!
❗️ The texture is not crisp, but dense and sturdy. Toast them after cooking if you want!
❗️ You could also make this into pancakes.
❗️ Omit the sweetener, add seasoning of choice, and make savory waffles.
I topped mine with sugar free maple syrup mixed with powdered peanut butter and served with mini pierogies and veggies on the side as lunch!
