This is a super fast and extraordinary simple meal. I’ve actually been doing it for breakfast, but it’s honestly delicious any time of day! Lots of shredded things, plus it’s the prefect meal to get ya shredded, hence the name! 😉
🫐 84g Frozen blueberries (microwaved for 30 seconds)
🥒 112g Shredded zucchini
🍚 30g Jasmine rice, cooked according to package (weighed before cooking)
🍗 84g Shredded dark meat turkey
🥥 20g Shredded coconut (I used frozen)
🧂Liberal salt and pepper
1️⃣ Microwave your blueberries for 30 seconds in a bowl. Set aside.
2️⃣ Microwave shredded zucchini, jasmine rice, and turkey to desired temperature.
3️⃣ Sprinkle with salt and pepper. Mix well.
4️⃣ Add blueberries and mix again.
5️⃣ Add shredded coconut.
6️⃣ Sprinkle with a little more salt and pepper.
❗️I’ve also used 112g Ground turkey, cooked (weighed before cooking) which has very similar macros to the shredded dark meat turkey.
❗️You could also use shredded chicken or any ground meat of choice.
❗️Play around with ingredient quantities to suit your macro needs.
❗️Swap out blueberries for dark sweet cherries.
❗️I meal prep my jasmine rice and meat then shred several zucchini so it’s easier to throw together these bowls each day!
❗️I bet this would also be yummy if you swapped the jasmine rice with a cream of rice!
