Macro Friendly Mondays — Oven “Fried” Okra!

Growing up, one of my favorite side dishes was fried okra. It (or green bean casserole) was always on the menu when I got to choose my birthday dinner. Definitely not the healthiest, but so delicious! This #MacroFriendly #LowFat version will satisfy the craving without busting the calorie bank.

🥣 Ingredients:
👉🏼15 oz frozen chopped okra, steamed per package directions
👉🏼46g egg whites (carton kind)
👉🏼20g oat flour
👉🏼10g almond flour
👉🏼1/2-1 tsp seasonings of choice (I used and herb blend that was salted)

👩🏻‍🍳 Instructions:
1️⃣ Preheat oven to 385°F and line a baking sheet with aluminum foil and spray with cooking spray.
2️⃣ Mix the oat flour, almond flour, and seasoning in a bowl.
3️⃣ Measure whites into and contain large enough to toss the steamed okra in the egg whites (I used a Tupperware with a lid).
4️⃣ Pour off any extra egg white if you have some (but reserve it; don’t discard), then sprinkle the flour and seasoning mix over the okra and toss to coat.
5️⃣ Spread the coated okra on the prepared baking sheet in a single layer, leaving room between the pieces. Sprinkle with the remaining amount of egg whites (if you had any).
6️⃣ Spray with cooking spray and then bake for 25-30 minutes, or until crispy.

📝 Notes:
▶️ Nutrition is for one serving; recipe makes two. (Cooking spray not included).
▶️ Adjust seasoning to taste.
▶️ Best eaten right away; leftovers will be mushy.
▶️ I used frozen pre-chopped okra, but you could use fresh.
▶️ I’m sure you could also do this in the air fryer as long as you kept it single layer (may need to cook in batches if yours is small).
▶️ If you want this to be lower in cabs, just use all almond flour or Parmesan in place of the oat flour.
