Crispy Broccoli Slaw

I love finding new ways to use familiar products. I have steam cooked broccoli slaw as a pasta alternative before, but the other day it dawned on me to try roasting it until it was crispy. I am so glad I experimented!! This crispy broccoli slaw is kind of like a cross between hash browns and shoe string fries. I love the crispies!

This recipe is really not even a recipe, but more of a method. You can’t beat how easy it is! It’s a fun side dish that adults and kids will enjoy. Plus, it is super healthy and budget friendly! Simple for the win!

You can use this as a salad mix in too. The warm slaw mixed with cool greens is amazing. I also love pairing this with drippy fried eggs for breakfast!

Also, for you volume eaters out there, this recipe is a game changer! You can have an entire bag of broccoli slaw (depending on the size) for a nutrient-dense 100-125 calories!

Crispy Broccoli Slaw:

1/ Steam a bag of broccoli slaw (poke holes in it with a fork first) for 4 minutes in the microwave.

2/ Line a 13 x 9 pan with aluminum foil and spray with cooking spray. (**Make sure you use the size listed here or the time may vary and it might burn!**)

3/ Spread mix evenly and spray mix with cooking spray again. You can sprinkle with seasoning of choice, if desired (I like sea salt).

4/ Broil on low for 20-25 minutes (until crispy). Don’t toss during the time and watch closely starting at the 15-20 minute mark as your oven may vary from mine. I have a gas oven. I’m not sure how different time might be for an electric one. Burnt slaw is no bueno.
