Macro Friendly Mondays — Fat Free Crispy Potatoes!

Today’s post is more of a method than a recipe, but too good not to share! Idea courtesy of @KelseyJFit on Instagram with tweaks for the oven (her method uses the air fryer but mine is tiny). Check out her highlights for the original method.

Essentially, if you’re looking for crispy potatoes without using oil—or even cooking spray—this is the key! Cut potatoes however you would like. You can make fries, or chips as in my photo. Place in a bowl with enough water to submerge and microwave for 3 1/2 to 4 minutes. Watch closely that it does not overflow. Let sit for 15 minutes, then rinse and pat dry as needed. Place on a parchment or aluminum foil lined baking pan. Sprinkle with seasoning of choice. Bake at 400 for 8-10 minutes, then place on top shelf under low broil for 4-6 minutes, turning pan as needed to get even browning. Enjoy!

‼️ I used a veggie slicer to get even cuts.
‼️ Adjust baking time depending on how thick your potatoes are.
‼️ Macros are for 5 oz baby gold potatoes.
