Life-Changing Fall Harvest Salad + A Few Food Confessions

Can I share something embarrassing things with you?

Promise you won’t judge?

Ok here goes:

1️⃣ With the exception of my tried and true favorite places, I like my food at home better than restaurants a lot of the time 🏡

2️⃣ I know we are supposed to eat a variety of foods, but I can seriously eat the same things ALL the time without getting bored. Like over and over for weeks before finally I get tired of them and move on. I even tend to make the same recipes over and over for meal prep and just rotate through them every few weeks. That actually serves me pretty well because in don’t have to think a lot about my food and can spend my mental energy elsewhere. But, I know that most people would probably gag if they ate the same thing so frequently 😂

3️⃣ My husband and I rarely eat the same things and buy all of our groceries separately. With such crazy schedules, there’s just no way to sit down and eat together most days. It just makes sense for us to buy our own food 🤷🏻‍♀️

Sometimes though I know that being such a creature of habit gets me out of the habit of experimenting. This week I decided to break from routine and risk a new combo for my #MacroMicroBowl and I am SO glad I did. Absolute heaven!

Details on what’s in my salad, AKA #MacroMicroBowl:

Kale, kale slaw mix, roasted acorn squash, air fried sweet potatoes, Green Giant spirilized beets, jazz apple, and a new-to-me brand of bacon flavored ground turkey I found at Publix. Made a almond/cashew butter vinaigrette since I didn’t have enough of either for the recipe and forgot to buy the tahini I planned to use🤦🏻‍♀️

Nutty Dressing:

  • 6 TSBP almond or cashew butter
  • 2 packets of true lemon
  • 4 oz apple cider vinegar
  • 4 oz water
  • 1 tsp garlic
  • 1-2 tsp Morton’s Nature’s Seasoning (to taste)
  • 10 packets Splenda (or sweetener of choice to taste)
  • 5g gelatin powder (optional; use if you want a thick dressing)

Directions:

Blend in a blender and allow to sit for 30-60 minutes in the fridge to thicken if making with gelatin.
