My husband brought me home several locally-grown squash and zucchini the other day because he knows that lately, I just can’t get enough of them! See evidence here. It was such a thoughtful surprise, and since I needed something to take to work for lunches for the remainder of the short workweek, I was extra excited!
Not really much of a recipe so to speak with this meal, and you really can’t go wrong with changing out seasonings to suit your preference. All I dish wash and chop the zucchini and the squash and cook it in a pan with some EVOO and Greek seasoning. Then I sautéed the shrimp the same way— with EVOO and Greek seasoning. I also took a little container of Saucy Lips Foods Tangy Mango sauce for dipping 😋
