It is no secret how much I love my slow cooker! This week for meal prep I made a new crockpot recipe that I found on Fit Slow Cooker Queen. I’m so happy to have stumbled onto Shannon’s site! In case you missed it on my Instagram page, I wanted to share the recipe link with you guys since I enjoyed it so much AND the hubby did too! When he tells me: “You can make that again anytime you’d like,” it’s the sign of a really good recipe! I served mine with Green Giant riced cauliflower medley.

Note: Hubby is a seafood snob―especially with gumbo. His mom’s side of the family has been in the shrimping business for multiple generations. He turns his nose up any time I use store bought seafood because he is used to the good stuff. Even though I used frozen cooked shrimp in this, he didn’t seem to mind 😀
I was able to get all the ingredients at Wal-Mart. I’ve included the brands and edits I made here, but please refer to her page for the full ingredients list and method.
1/ I used 1 pound of frozen chicken breasts (Harvestland brand) in place of the thighs so I wouldn’t have to pull bones out after cooking. Once the breasts are cooked, you can just shred them with a fork.
2/ I used 2 precooked chicken sausages (Applegate brand) and since it was precooked, it held up with slicing well.
3/ I used one bag of a mix of frozen okra, celery, and onions (Picksweet brand) in place of the separate ingredients.
4/ I used a 12 oz bag of precooked shrimp.
5/ I used freeze dried garlic (Litehouse brand) because I hate chopping the fresh cloves, and it always goes bad before I can use it all!
6/ For those who don’t like strong seafood flavor, this recipe is perfect! Next time I make it, I’m going to add some crab in order to enhance the seafood taste.
7/ I omitted the cayenne, because I’m a wimp!
Check out the recipe for Slow Cooker Gumbo on her site! You will be so glad you did!
