Macro Friendly Mondays — Homemade Jiffy Style Cornbread Mix!

This legit tastes exactly like the stuff from the box, but contains no sugar and minimal ingredients! Use it any way you would one box Jiffy cornbread mix!

🥣 Ingredients:
🌽 1/3 cup (76g) cornmeal (I used Bob’s Red Mill as all the others on the shelf contained sugar)
🌽 2/3 cup (80g) oats ground into flour (I use my bullet blender)
🌽 3 TBSP sugar substitute that measures like sugar (I used 9g of granular Splenda)
🌽 1 TBSP baking powder
🌽 1/2 tsp salt

👩🏻‍🍳 Instructions:
Suuuuper easy! Whisk everything together and use as you would the boxed mix! I have a fun recipe coming soon using this, but let me know if you try it before then!

📝 Notes:
❗️Macros are for the entire batch.
❗️Omit sweetener if you like your cornbread less like Jiffy and more savory.
❗️Try adding seasonings or fresh herbs.
