So I’ve been MIA. We recently bought a house and are still in the move-in phase. Combine that with an hour commute each way to work, trying to maintain consistency with my workouts (before going to work), keeping on track with meal prep, and attempting some form of social life doesn’t leave a lot of time for blogging. I will do what I can when I can!
So…Just stopping in to share a quick recipe. Part of this week’s meal prep was a #StrangeButGood! I have been meaning to share the recipe for a few weeks. I wasn’t really sure what to call it, so I am going with “Cottage Cheese Waldorf.” I served it with some Suzie’s brown rice cake thins. Looks odd, but tastes amazing!

Cottage Cheese Waldorf
- 2 cups (452g/8oz) low sodium cottage cheese (can try with regular/not low sodium, but I’m not sure if it will bee too salty. Farmers makes a 1% low sodium and that’s what I used)
- 1/4 cup walnuts chopped fine
- 1 TBSP cinnamon
- 8 TBSP (48g) PB2
- 5 cups (230g) chopped apples
- Vanilla Cream Stevia drops to taste
- Splenda/Stevia to taste
Mix all ingredients.
Makes 5 servings.
Macros per serving (without the rice thins): 183 calories/5.8g fat/16.5g carb/17.7g protein
I’ve also made this with diced broccoli slaw in the mix for some extra veggies. You could see it, but you couldn’t taste it!
