Got a festive recipe for you for this week’s #MacroFriendlyMondays post, although it is great year-round! This one comes directly from the Trevor Kashey Nutrition blog recipe archive!
Fresh herbs combine with lean ground turkey for an easy meatball recipe with a range of applications. Since this recipe uses lean ground turkey, which traditionally contains about 7% fat, we add sweet potato and cranberries to the meat mixture to add flavor and moisture. See notes section below for tips and serving suggestions!
🦃 93% ground turkey – 224g
🦃 sweet potato (raw) – 80g
🦃 cranberries – 55g
🦃 coconut flour – 7g
🦃 avocado oil – 7g
🦃 rosemary – pinch/to taste
🦃parsley – pinch/to taste
🦃 salt – pinch/to taste
🦃 sage – pinch/to taste
1. Preheat oven to 400F and line the baking pan with parchment paper.
2. Add raw cranberries to a blender and pulse until finely chopped.
3. Shred sweet potato with a cheese grater.
4. Combine all ingredients and mix well.
5. Measure out 15g per popper and shape into meatballs.
6. Bake for 16-22 minutes or until lightly brown.
❗️When shaping the meatballs, be careful not to over work the mixture as you form the balls, which will make them dense and tough.
❗️You’ll also want to keep the size of the meatballs consistent to ensure even cooking.
❗️You can serve these bite-size morsels as an appetizer / hors d’oeuvre, or combine with pasta, zoodles, spaghetti squash, or rice for a main course.
